Patridom XO Cask is a molasses rum produced in the Dominican Republic. It is aged in small ex-bourbon American oak casks.
This is the new name for Ron Esclavo XO Cask. The rum remains unchanged.
Unlike the Patridom XO version, it is very little reduced and therefore concentrates the aromas more.
Nico's tasting notes
The nose is divided between a slightly resinous, medicinal plant and powerful roasting notes. The concentration of the molasses distillate offers a certain liquorice, aniseed freshness, with almost menthol accents. Next to this, we imagine a barrel well blackened by the flames, which delivers notes of coffee and vanilla.
The aeration emphasizes this vegetal, floral, intense and concentrated originality. The molasses brandy has retained the liquorice and sometimes medicinal side of this raw material, and restores them with enthusiasm. A few roasted caraway seeds go well with this trend, they are joined by other roasted spices.
The palate is powerful but also very round. The vegetal and resinous notes then become very gourmet, and we end up with a molasses candy with spices. The roasted nuts are tasty, pecan in the lead, and they open the way to prunes or candied berries. The caramelization aromas become more powerful in the middle and end of the palate.
The finish is very round and caramelized, with a well-cooked and sticky molasses.
