This Oloroso Sherry Cask Finish is a Barbados molasses rum from Plantation's Single Casks series. All the rums in this collection benefit from two major aging periods, under tropical and continental climates, before receiving an original finish.

This rum was made at the West Indies distillery, located on Brighton's tropical beach. The molasses is fermented for 3 to 4 days before being distilled in an iron still and a column still.

After aging for 4 years on site in ex-bourbon American oak barrels, the rum was transferred to Ferrand Cognac barrels in the Château de Bonbonnet cellars for a further 5? years. Finally, a 6-month finish was applied in Oloroso Sherry wine casks, before bottling in 2021.

Each bottle in this limited series has been numbered.

Nico's tasting notes

On the nose, there's a solid Barbados rum, firmly planted on oak, vanilla, toasted coconut and caramelized nuts. In its higher notes, it also carries something more vegetal, drier and slightly peppery.

Aeration loosens all this up, and the wood transformed into nougatine begins to melt abundantly. A hint of rye, of toasted cereal, makes an appearance. Then the whole becomes chocolate, mocha and nutmeg, taking us into a Christmas atmosphere.

On the palate, we're delighted to find the same gourmet concentration, with a roundness that echoes our mellow, melting nougatine encountered on the nose. The wood is tender too, and its toasted surface releases flavors of caramelized nuts with sweet spices.

The finish is round, gently spicy, and the wood fiber turns to nougat.
