Plantation Rum 2007 Fiji Antipodes is a molasses rum from the Fiji archipelago.

This rum was distilled at Rum Co. Of Fiji in 2007, in a pot still. It comes from a single cask aged for 14 years in the tropics. It was then transferred to the cellars of Château de Bonbonnet, where it rested for a further year in a 10-Generation Ferrand Cognac cask.

Each bottle is numbered.

Nico's tasting notes

The nose is extremely generous and imposing, with a fruity, strongly solvent-tinged concentration reminiscent of a Caribbean cousin island... After this impressive and rather enthusiastic approach, we discover a few woody notes with hints of putty, leading us gently towards pastry.

Aeration and, above all, rest then give us a relatively more sedate profile, with fruit rumbling beneath a bed of sweet spices, almond milk and stone brandy. The hint of mastic still lingers, giving this rum its unmistakable character.

The palate is powerful yet balanced, building first around copper-tinged cores. For a moment, you're right in the heart of the distillery, close to the rumbling, smoking stills, and then the palate is swept away by an oily wave of exotic fruits, alternately sweet and acidic. This is a profile of character, coated by a rounded touch that is not sweet in the least.

The finish is pastry-like, and develops at length on almond milk, pine sap, pits and prunes.
