Plantation Rum 2007 Guyana is the4th opus in the "Under the Sea" collection, illustrated by a dolphin nicknamed "porpoise" in Guyana. This is a molasses rum produced by Demerara Distillers Limited.

The rum fermented for a week before being distilled in 3 historic stills: the Port Mourant double pot still, the French Savalle four-column still, and the Coffey Still wooden column still from Enmore. It was then aged for 15 years, including 13 years in 200-liter bourbon casks in a tropical climate, followed by 2 years in 350-liter Ferrand cognac casks in a continental climate.

A total of 21 barrels were bottled in 2022, with no added sugar.

Nico's tasting notes

On the nose, the rum shows a certain heaviness, as well as a palpable thickness. In its folds, we find a paste of melted, caramelized nuts, sweet coffee, then wood laden with moisture. The alcohol escapes, releasing coppery vapors that seem to bear witness to a white-hot alembic.

With a little air and rest, the lighter notes fade away as the atmosphere becomes less heavy. The spices present themselves simply, in the image of a well-rounded vanilla with hints of tonka bean or cinnamon. Velvety exotic fruits remain, adorned with toasty oak.

The palate balances the rum's full-bodied character of copper and roast, the roundness of vanilla oak, then the savory side of caramelized nuts. Power comes to the fore in the mid-palate, with spices and a metallic touch, leaving the palate marked by roasted nuts.

The finish is long, pastry-like and full-bodied, with pecan and maple syrup-tinged molasses that sticks to the palate for a long time.
