This vintage is the second reference in the “Single Cask 2023” collection from the Fiji archipelago. This is a selection from the German distributor Kirsch Import.
The rum comes from fermented molasses then distilled at Rum Co. of Fiji in 2011.
Coming from barrel #1, it has benefited from the traditional treatment of the Plantation house: double aging followed by finishing. After 7 years in bourbon barrels in the tropics, the rum aged for 4 years in cognac barrels in the southwest of France. It then passed into a Marsala barrel for a one-year finish.
The bottling of this vintage was done without reduction and without adding sugar.
