Plantation Rum Panama 2010 Sherry cask finish is a vintage from the “Single Cask 2023” collection.
The rum comes from Panama and was distilled at Las Cabras in a column still. It is a molasses rum whose fermentation did not exceed 3 days.
Concerning the aging, unsurprisingly, it is a double aging followed by a finish. First tropical, for 8 years in bourbon barrels. Then in a second phase, continental with 4 years in Ferrand cognac barrels. For the refining, the cellar master selected a barrel that previously contained sherry to let the rum rest for a year.
