Planteray Rum 15 Year Old 2010 Haiti is a pure cane juice rum distilled in a column still by Jeanty after 5 days of fermentation . Jeanty is a distillery located in western Haiti.
After an initial aging of 5 years in ex-bourbon casks, the rum was transferred to the cellars of Maison Ferrand for an additional 10 years of aging under a continental climate.
Each bottle of this single cask is numbered.
Jérémie's tasting notes
On the nose : There are mineral notes, brine, metallic notes (copper), very sweet cane, aromas of pear and persimmon; there are floral notes reminiscent of geranium.
On the palate : A soft and salty attack, with a hint of bitterness, reveals fruits like grapefruit or bergamot as well as oxidized red fruits which accompany a honeyed cane mixed with spices (sumac, candied ginger)
The finish : we remain on candied fruit and floral notes.
It needs to be left to breathe for 5 to 10 minutes to appreciate the aromas both on the nose and on the palate, otherwise the mineral notes on the nose and bitter notes on the palate take over too much.
