Providence 3 ans 52°: Description and customer reviews

Providence 3 ans is the first aged rum from the young Port-au-Prince distillery.

This is Providence First Drops 2019 after 3 years of aging. This ageing was carried out in 25 casks that had previously contained rum, and not just any rum since these are ex-caroni casks!
This rum was distilled from pure crystalline sugarcane juice on September 29, 2019. The still used is a Muller heated in a bain-marie.

This cuvée is made entirely by hand using traditional methods. No automated machines are involved in production.

Nico's tasting notes

On the nose, the wood offers a wide range of sweet spices, starting with vanilla, but also more vegetal nuances, with a candied herbaceous side. This fresh, solid oak gradually releases its secrets, and begins to let through the juice of ripe, fruity cane.

With aeration, the lightly cooked cane juice takes on the woodiness and feeds off it. It takes on its vanilla essences, and builds up a lovely patina, like a varnish that coats and protects it.

The palate balances a highly aromatic eau-de-vie on the one hand, richly fruity and slightly milky, and on the other a spicy woodiness filled with pepper and vanilla syrup. The rum slowly lulls the palate with its almost creamy, vanilla-like quality, offering a fatty, oily texture, like a sweet spice syrup.

On the finish, the concentrated, tropical cane comes to mind, its candied citrus peel and hint of olive holding the palate for a long time.
