Providence
Providence rum comes from the young Distillerie de Port-au-Prince, Haiti. Founded in 2018, it is the fruit of the collaboration of a handful of enthusiasts. On one side, the inimitable Luca Gargano and La Maison & Velier, and on the other, the Linge / Barbancourt family. The former's dream was to recreate a vanished style of rum, the one Barbancourt produced until 1992. That was the year the distillery abandoned discontinuous distillation. A partnership was formed with the Barbancourt heirs, under the technical guidance of maestro Gianni Capovilla, who was already working with the Rhum Rhum brand.
Providence is a rum made from pure sugarcane juice and syrup. The raw material comes from Saint-Michel-de-l'Attalaye, where Michel Sajous grows crystalline sugar cane, without pesticides or any other chemicals.
The syrup and pure cane juice are fermented separately for around 10 to 12 days. They are distilled in turn in a Muller still with a capacity of 3000L, built according to Mr. Capovilla's instructions. As with Rhum Rhum, distillation takes place in a bain-marie, and the still is fitted with a small 6-tray column. The pure juice and syrup distillates are then blended for a second pass through the still. The proportion of syrup distillate is 85-90%, compared with 10-15% pure juice distillate. In the end, 72% of Providence rum is distilled, then gently reduced to 57%. Read less
