Redbreast 15 years Single Pot Still 46° is made half from malted barley, and the other half from unmalted barley. It is then aged in bourbon barrels and oloroso sherry barrels.
No cold filtration for this whiskey produced by Midleton Distillery!
Our tasting note from Thomas
The nose shows a nice diversity. First, barley and chocolate mousse provide a certain density. Then candied lime adds a little acidity, and spices like turmeric and nutmeg are present. Fruit cereals (raspberry, blackberry) follow.
Aeration brings us cream with a hint of praline. The fruit is not left out, with a hint of peach, a few touches of vanilla and a return to chocolate-raspberry cakes. The Irish roundness is there, but the nose is not one-dimensional. Prolonged aeration reveals a light floral bouquet.
The palate has a lovely silky texture and a very respectable amplitude. Chocolate mousse is still present, as are red fruits (raspberry, blackcurrant). The palate then drifts on to hot chocolate, peach and hazelnuts. The second part of the palate is warmer. The second part of the palate is warmer, giving pride of place to the fruit, but without neglecting the chocolate and spices (cinnamon, cardamom).
The finish returns to its first gourmet love, with that famous chocolate mousse. Staying well in the mouth, it feeds on wood and cinnamon (light bitterness), cardamom (freshness) and fruit (peaches, strawberries, blackcurrants). The latter become slightly acidic.
"A whiskey that respects the fruity nature of its Irish origins while offering a lovely chocolate note... "

Pleasant, well balanced, but not really superior to my old version of 12 years 40%.
