Rosemont is the only white rum to be distilled and bottled in Quebec. It is made from "fancy molasses".
There are two types of molasses. The first is extracted at the beginning of the sugar refining process, and the second at the end.
The first molasses contains few minerals and a lot of sugar. It is used to make "fancy molasses", the kind you find in the shops. The second has a higher mineral concentration and is less sweet: it's green molasses, also known as "blackstrap".
Fancy molasses is fermented at low temperature. It is then distilled twice in the Charentais alembic, which collects the heart of the toast.
