Rum & Cane Belize XO Single Cask is a rum in the English tradition. Distilled from molasses in Belize , it has aged entirely in ex-bourbon oak barrels under a tropical climate for a period of 16 years .
Bottling from a single cask, it was done without additives or chill filtration. This XO rum, bottled by West Indies Rum & Cane Merchants, comes from the Travellers distillery.
Jérémie's tasting notes
On the nose:
The nose opens with woody and roasted notes, accompanied by sweet spices. A delicate and elegant touch of vanilla completes the composition. With aeration, the profile evolves towards a more pastry-like register, marked by candied fruit, cinnamon, and vanilla, with a slight mocha accent. The influence of the bourbon cask is clearly apparent, structuring and well-integrated.
In the mouth:
The attack is round and direct, dominated by notes of cooked brown sugar. This is accompanied by aromas of candied apricot and marmalade, quickly joined by a slight bitterness of cocoa and a peppery touch. The mid-palate evokes a rich and indulgent gingerbread with fruit and honey. The roasted notes gain intensity, evolving towards a mocha coffee character, while nuances of toasted nuts (almond, walnut) develop. With aeration, the spices, particularly clove, as well as the roasted oak, become more pronounced and structured.
The final:
The finish is dominated by spicy notes and a persistent roasted woodiness, which prolong the tasting experience.
