Saint Aubin Sauternes Finish is a 100% pot still pure cane juice rum from the Saint Aubin rum distillery. It is aged for 6 years in French oak barrels before spending 1 year in port casks.

Nico's tasting notes
The nose is immediately enveloped by sweet vegetal notes, such as candied angelica, honeyed herbal tea, aged cane juice and gentle spiciness. The wine barrel brings us ripe grapes and dried fruit, but also a certain buttery edge.
With a little aeration, the rum continues to evolve around an old wine, while never taking its eyes off the cane. The cane juice is thick but retains a certain herbaceous freshness. It's also, and above all, garnished with nuances of prunes, sweet spices and hints of walnut.
The palate surprises with a creamy, almost milky note that embraces the taste buds from the outset. This rather unique profile is enriched by vanilla and other sweet spices, as well as cane juice reduced to syrup. The spices refine and harden a little later, and the rum tightens on a drier woodiness.
The finish is softly vegetal, lightly caramelized and vanilla-like, with a savory blond tobacco that settles in with length.
