Saint Aubin Single Cask 2010 is a rum from Mauritius. It was distilled in 2010 at the Saint Aubin artisanal rum distillery in a pot still.
It is a pure cane juice rum which has aged for 8 years in an old port barrel, then 3 years in an old bourbon barrel before being bottled cask strength at 51.2°.
This unique barrel produced 241 numbered bottles.
Nico's tasting notes
The nose reveals highly concentrated caramel, a sticky nougatine encrusted with roasted nuts. Molasses is not far away, even though we're dealing with a rum made from pure cane juice. The latter is cooked, candied and reduced to a concentrated syrup.
Aeration brings us back to fresh cane juice, from a ripe plant bursting with sugar. This patinated juice mingles with the soft, mellow wood fiber, with aromas of sweet spices and blond tobacco, enhanced by a hint of tannin and fruit.
The palate is meltingly smooth, like a large cane honey candy, and perfumed with toasted oak, very slightly tannic and almost sulphurous, then very tender, melted and vanilla-flavored. The cooked cane juice takes on hints of caramel, licorice, buttered brioche and cinnamon or tonka bean. It's fair to say that the rum is as complex as it is delicious, but it also manages to retain a fresh, herbaceous side.
The finish is round, full of more than ripe cane juice and even quite candied.
