Saint Nicholas Abbey 5 ans is a rum made from sugarcane syrup on the island of Barbados. The cane is grown on an estate whose origins date back to the 17th century. It was bought by the Warren family in 2006 to create the island's 4th distillery (along with Mount Gay, Foursquare and WIRD).

The rum is distilled in a hybrid iron still called Annabelle. It is then aged in ex-bourbon American white oak barrels for 5 years.

Bottling is carried out entirely by hand in elegant, individually engraved decanters, sealed by a mahogany wood stopper topped with embossed leather.

Nico's tasting notes

The nose greets us with sweet aromas of cane sugar melted with lemon juice, with a rather calm and composed side, without extravagance. The rum settles nicely at the bottom of the glass, with the vegetal side of the cane mellow and candied.

With aeration, the ripe cane unfurls like a flower with heavy petals, revealing nuances of marron glacé and full-bodied cane sugar, sprinkled with tonka bean and vanilla. At times, a slight acidity takes flight, evoking the sweet-sour side of fermented cane juice.

The palate is a sweet, savory little cane candy, proof that pure-juice rums can also be particularly mellow and gourmet. The cane sugar aromas encountered on the nose develop the same nuances of marron glacé, with hints of citrus and steamed artichoke.

The finish is gently spicy, like a cake batter enhanced with rum.
