Saint Nicholas Abbey 8 ans is an artisanal rum made from cane honey. Saint Nicholas Abbey is located on the island of Barbados, in the parish of Saint-Pierre. The estate was built around 1660, but the distillery was only created in 2006, when it was bought by the Warren family.
Sugar cane grown on the 90-hectare plantation is transported to the distillery, where it is crushed in an 1890 steam mill (built by Fletchers of Derby in England). The cane juice is then cooked and stored. This ensures year-round production, as the Barbados harvest season only runs from January to June.
The rum is distilled at 92° in a column called “Annabelle”, then barreled at 65°. It is aged on site for 8 years, in American white oak barrels that previously contained bourbon. Bottling is entirely done by hand in magnificent decanters that are individually engraved, numbered and dated.
