Samaroli Demerara Symphony 2021 is a blend of molasses rums. These were carefully selected by the late Italian bottler Silvano Samaroli. The company, now run by his wife Maryse Samaroli, has produced many exceptional bottlings.

The Demerara was created from two casks repatriated to Scotland, one from 2003 and the other from 2004. They were then blended and bottled on site in 2021. This rum, at least 17 years old, is available in 677 single units on the market.

Nico's tasting notes

The nose describes a fruity facet of the Demerara style, typically tinged with a coppery, full-bodied touch reminiscent of the Port Mourant still. There's also a certain mellow, pastry-like ambience, cushioned by a delicate almond paste.

With aeration, a gentle harmony is created, first pastry-like, with green almonds and raisins soaked in old rum, then elegantly floral. The slightly coppery cores add a gourmand intensity that spreads and bewitches.

On the palate, pear, green banana and almond create a profile that flirts with that of a whisky. The acidity of the fruit mirrors the mellowness of the almond, to create a stone brandy on a walnut tart. A hint of smoke recalls the toasted oak cask, and the coppery side of the distillate.

The finish is greedy and pastry-like, with a candied vegetal note that evokes the reduced juice of ripe cane.
