So'Rhumantic is a Belgian artisan who creates recipes for rhum arrangé. Here, mango and passion fruit are given pride of place.
These fruits are combined with white agricultural rum from Guadeloupe and organic cane sugar syrup.
In this recipe, the ripeness of the fruit is exploited to perfection. 50% of the passion fruit is under-ripe, for acidic, vegetal notes, while the remaining 50% is fully ripe, for a sweet, gourmet taste.
The mango, which is at optimum ripeness, brings a gourmet fruitiness to the table.
Nico's tasting notes
The nose opens with a rather sweet, slightly tart rum arrangement, with passion fruit which mixes with agricultural rum in a typically West Indian delicacy.
The palate offers us a sensation of freshness, with passion fruit both sweet and tangy, well balanced. The mango is then accompanied by rum, for a supple and tasty duo, calmer and velvety than passion fruit.
