Spytail is an aged rum in which fresh ginger and spices have been macerated, with a finish in Cognac barrels to complete the process. Inspired by a recipe dating back to the 19th century, this maceration is made in Cognac from rum imported from the Caribbean.
La belle bouteille, meanwhile, is a tribute to Jules Verne and Captain Nemo.
It can be drunk neat, or with a Cuba Libre or Negroni.

Summary: ginger - pepper - lemon - very fragrant
The nose is a big whiff of ginger, with all that pepper and citrus. It's fresh, but also a little floral and light, like ginger juice. The latter becomes increasingly candied and sweet. The lemony side could also be lemongrass.
The aeration accentuates the peppery aspect, bringing to mind ginger as a powdered spice. There's also a woody, fibrous vegetal nuance reminiscent of licorice with a hint of menthol. Pepper is adorned with oriental scents, taking us to Asia, to Sichuan and a meadow where lemongrass grows.
On the palate, the balance between ginger and lemon works well. It's strangely like tasting a perfume, as the retro-olfaction (the aromas that come back up the nose) clearly reminds me of Vetiver or Habit Rouge. If we were to break down these fragrances, we could describe notes of lemongrass, red fruits, spices, bergamot and cedar.
The finish is rather spicy, with cinnamon, bergamot and a hint of lemon.
