Toucan Spicy n°4 is based on white rum from the same Guyanese brand Toucan. This is left to age for a year in a barrel that has previously “housed” Armagnac (Bas Armagnac to be precise), with a “homemade” woody infusion.
Rare enough for a spiced rum: no added sugar.

In brief: cane - sweet spices - woody - mellow - melting
The nose opens up to a lovely, rather interesting rhum agricole, with the heavy, deep aromas found in rums that have benefited from good fermentation. A fine cane eau-de-vie, sweet, with light citrus. Mild spices begin to sparkle in the distance.
Aeration brings out a toasty woodiness that supports a cane juice with accents of tender artichoke. You'll want to chew this mellow cane, subtly tinged with spicy, exotic wood.
The palate is very smooth, with a mellow, candied cane that keeps melting into milk chocolate, toffee or even marron glacé.
It's in the finish that the woodiness returns in a very gentle way, with the cane having been greedy and elegant from the start.
