Toucan Blanc is an agricultural rum produced in the Saint-Maurice distillery, in Guyana.
After fermentation and distillation, the rum is taken to Gers, France, to be gradually reduced to its 50° strength. Toucan Blanc seduces above all for its wild character preserved throughout the process.
Toucan Blanc 50° won the gold medal at the Rhum Fair in Paris in 2013.
Nico's tasting notes
On the nose, this rum is soft, subtle and delicate. We have a lovely bouquet of spices, enhanced by a hint of solvent, which immediately shows depth and complexity. The cane is peppery, with a hint of lemon zest. It's a natural eau-de-vie, particularly sweet and aromatic, well chiselled. You can imagine a very silky rum, and smell it at leisure, without the risk of scratching your nose. Further in, notes of licorice and aniseed emerge.
Aeration gives it an extra dimension, it gains in fullness and power, the brandy that was calm until now becomes more peppery and pungent. All the aromas are lifted by this full-bodied wave, with a dominant lemony note.
On the palate, the attack is very pretty, with a round, fat yet intense cane. This intensity brings out smoky notes on the nose, which is unusual for a white rum of this type, and once again demonstrates its complexity. The cane is tasty, gourmand yet balanced, a true eau-de-vie de haute couture.
On the finish, a few notes of fermentation and metallic hints confirm the authenticity of this rum, which expresses itself in its entirety.
