Building on the success of its white rum and vanilla rum , Toucan is offering us the first aged rum in its range. And what an aged rum!
Indeed, made from red cane and distilled in a Creole column, this Guyanese agricultural rum is a vintage: 2015. On the other hand, it is aged in the Gers in Bas-Armagnac barrels. Finally, it is published in only 1200 copies.
Nico's tasting notes
On the nose , we find all the delicacy of this Guyana rum, nestled in precious and relatively dry wood. The cane and lime have matured in a cocoon, they are round and mellow. Some sweet and velvety spices caress the nostrils, this first nose is most pleasant.
With a little air, the cane unfurled, opened like a flower, and now reveals delicate aromas of dried fruit. One thinks of apricot, but also guava or mango. All this is done subtly, always with the velvety texture of this lovely cane.
The palate presents the same delicacy as the nose, with a velvety and mellow cane. It thus reveals a lovely complexity, without jolts or sharp relief. The fresh sugar cane is definitely present, rather peppery, with a tender fiber and already aromas of full sugar.
On the finish , there is a slight bitterness of lime zest and some notes of vesou fermentation, in pure agricultural style.
