Trois Rivières Ambré Finish Whisky is an agricultural rum produced in Martinique. It complies with the Appellation d'Origine Contrôlée specifications.

Initially, the rum spends 12 to 18 months in oak foudres. Cellar master Daniel Baudin and his team then finish the rum in single-malt whisky barrels from the Rozelieures distillery in Lorraine. This finish lasts 6 months.

Nico's tasting notes

On the nose, the candied lemon cane juice takes on the appearance of fresh, fragrant spring honey. A hint of wood complements the peppery agricultural rum, with a subtle cereal and fruitiness from the whisky.

With aeration, the citrus peel adds a little more firmness and intensity. A lively, full-bodied pure cane juice takes over, with the whisky and rum fruits adding a delicately colored patina.

The palate is round and fluid, like cane juice elongated with very sweet lemon juice. Pepper quickly appears on the tip of the tongue, then gains a touch of almond and cereal before spreading its flavors over the rest of the taste buds. Some yellow fruit colors the mid-palate, before we discover a green banana as well as a pineapple and a papaya with a very sweet flesh.

The finish is more candied and rounded, with the vegetal cane changing to blond tobacco spiked with citrus.
