Trois Rivières Double Wood is an agricultural rum from the "les éditions du bar" range. It is produced by "la Plantation Trois Rivières", the famous Martinique distillery based in Sainte-Luce.

This rum is aged in wood after being distilled in a Creole column. Cellar master Daniel Baudin opted for a double maturation process.
The distillate spent 7 months in a large 40,000-liter American cask, then 9 months in small 200-liter French ex-whisky barrels.

Nico's tasting notes

The nose opens with dark notes of cane juice that almost seems to have been smoked. Notes of toasted cereal echo this roasted ambience, then the rum opens with a relatively light agricultural rum of cane and young dried fruit.

With aeration, we find our apricots and raisins soaked in rhum agricole. They've grown a little fuller and riper, and the cane juice has fed off them to gain a pleasantly candied character, garnished with sweet spices and blond tobacco.

The palate is fine and light, with fresh cane and fruit that glide easily over the palate. The wood enhances all this in the mid-palate, bringing its slightly tannic grain and sweet spices that swarm on the tongue. As with the nose, depth builds with time, and the fruit becomes more dried and candied.

The finish is softly peppery and lemony, true to Martinique sugarcane juice.
