Trois Rivières Rhum Vieux de l'Océan is an agricultural rum from Plantation Trois Rivières' "Bar Editions" collection.
This vintage is aged in ex-bourbon American oak barrels. Before bottling, a special reduction is carried out. Indeed, the cellar master Daniel Baudin chose to reduce this old rum from 75° to 54° with sea water. This filtered water was taken off the coast of Le Diamant, south of the island of Martinique. .
Nico's tasting notes
On the nose, we discover a rich rum, heavy in the good sense of the word, i.e. with an appealing thickness and depth. The very ripe cane gives us a honey-like juice, surrounded by a tropical humidity.
With the airing, we don't leave our hot, humid tropical orchard - quite the contrary. The fruit is bursting with sunshine and sugar, with velvety flesh and slightly acid juice. The tannins in the oak have sweated profusely, shedding their woodiest notes and leaving only fruity, mellow nuances, softly peppery.
On the palate, ripe cane takes on a more traditional profile, livelier and less moist than on the nose. Yet it is full-bodied and flavorful, lightly caramelized, almost toasted, with even a hint of salt. It's a real delicacy, thanks also to its relatively high, perfectly regulated alcohol content.
The finish is round, gently spicy and vegetal, and continues with candied cane and toasty woodiness.
