Yellow Spot 12yo is an Irish whiskey from the famous Midleton distillery. It is made from malted and unmalted barley, and distilled three times in copper pot-stills. This typical Irish method has been practiced at Midleton for almost 200 years.
This is a blend of whiskeys at least 12 years old, aged in bourbon, sherry and malaga casks.

The bourbon cask brings the patissier aspect. Malaga fut brings the fruitiness. I'm not a big whisky fan, as I find that they often lack sweetness, but I must admit that this Yellow Spot stands out from the crowd. In fact, on the nose, it could be mistaken for a bourbon.
Apricot, vanilla, toasted bread, honey, crème brulée and silky. I'd describe it as a deserty whiskey. Really the profile I like.
🎇 For the record, the Mitchell & Sons family were 19th-century wine merchants in Dublin who got into the whiskey business. They used the different-colored paint stains on the casks to identify the age of the beverages. Anyway, you can see that they know their stuff, because their whiskeys are really good (especially this Yellow Spot) 🎇
