Our tasting note from Thomas

The nose is unmistakably Irish. A fruity sweetness (plums, cherries, peaches) emanates from the glass, before marzipan enriches this first, fairly straightforward nose. Cocoa powder and dead leaves are welcome reinforcements, bringing a little contrast to the whole. Without being shy, this start is calm and in no way aggressive. After a few moments, cumin, 5 berries and a touch of waxed wood offer a slightly drier side.

The texture on the palate is very fluid and easy to drink. The fruit on the nose is still there, followed by cocoa powder and sweet spices (nutmeg, cumin). The second part of the palate brings out its cocoa flavors, while combining with waxed wood. Just before the finish, there's a touch of praline and yellow fruit, underlining the palate's assertive greediness.

The finish is not interminable, but retains its fruity, cocoa touch, for a mellow finish. The Irish spirit of this Redbreast is perfectly preserved right to the end.
