Zafra 21 ans Master Reserve is made in Panama. The recipe was developed by Francisco Fernandez, also known as Don Pancho, a master blender renowned in the world of traditional Spanish rums.
The rum was aged for 21 years in ex-bourbon American oak barrels. It was bottled on site in Panama.
Nico's tasting notes
The nose is immediately drawn into a sweet roasting atmosphere. Sweet coffee, toasted oak, well-cooked caramel... all this takes us to a warm brazier where a few steaming, comforting chestnuts are warming up.
With aeration, we discover a spicier side, but also a gourmand molasses with licorice accents. The profile remains dark but far from austere, all the more so as the sweetness of vanilla gradually settles in.
The palate is soft, but does not betray its promise: roasting is still the watchword. Notes of coffee, roasted nuts, toasted oak, then licorice molasses unfold in a roundness that never falters. Spices bring a little variety and later invoke pecan.
The finish is lightly smoky, and it's only at this point that the roast becomes really dark.
