Production takes place at La Rojeña , the historic distillery of Jose Cuervo and the oldest distillery in Latin America. The production process meticulously adheres to the standards of the Consejo Regulador del Tequila (Tequila Regulatory Council ): the piñas are slowly steamed for 36 to 40 hours in brick ovens, followed by the extraction of the aguamiel (a type of distillate), controlled fermentation, and then double distillation. Depending on the expression, the tequila is then aged in carefully selected oak barrels (American, French, or ex-cognac) using rigorously controlled methods.
