Created in Ireland in 1974, Baileys is now an iconic liqueur. Its origin, however, lies in an idea as simple as it is innovative: combining fresh cream with Irish whiskey to create a completely new drink.
At the time, Gilbeys of Ireland wanted to develop a new product capable of conquering both the Irish market and the international public. A dedicated team then embarked on experimenting with a new blend combining fresh cream, Irish whiskey, sugar, and cocoa.
The result is a smooth and indulgent liqueur with a low alcohol content (17%), boasting a sweet, rich, and mellow profile, immediately appealing to everyone. The name "Baileys," entirely invented, was chosen to evoke a warm and authentic Irish charm.
One of the main technical challenges is to stabilize this delicate mixture over the long term without resorting to artificial additives. The solution lies in the exceptional quality of Irish cream combined with a unique manufacturing process, allowing Baileys to have a shelf life of up to two years without any separation of phases.
Building on its success, Baileys became the first cream-based liqueur to be marketed on a large scale, quickly conquering markets worldwide. The brand then expanded into numerous indulgent variations, such as chocolate, coffee, salted caramel, and strawberry.
