Galleon

Le Galion is Martinique's only sugar mill.

The factory is located to the east of the island, on the Baie du Galion, near La Trinité. It was built between 1861 and 1865.

It produces sugar under the "Le Galion" brand, and also makes rum from the molasses produced by the sugar refinery:

• a Grand Fond Galion rum which is 50°
• a Grand Arôme rum from a very long fermentation process (around ten days).

The latter is used in perfumery, for pastries (cakes, candied fruit, etc.), and to boost rums in blends.

Rhum du Galion is obviously not an AOC, since it is a molasses rum far removed from the specifications of Martinique's rhum agricole. On the other hand, "Rhum de la Baie du Galion" does benefit from a geographical indication (GI) specification. Read less
