Single cask
A "single cask" rum is one that comes from a single barrel. The quantity of rum produced therefore varies according to the size of the cask and how full it is after ageing. Single casks are therefore very limited editions.
The word "single cask" on a bottle means that it has not been blended.
However, several casks can be combined into a single cask to prolong aging before bottling: this is called "ouillage". This maximizes the filling rate of the barrel. This process reduces the surface area of the spirit in contact with the air. This prevents excessive oxidation. Read less
