400 Conejos Mezcal 38°: Description and customer reviews

400 Conejos draws its identity from Mesoamerican traditions, where priests consumed agave-based drinks during rituals to communicate with deities. These gods of intoxication, called Centzon Totochtin in Nahuatl – literally “the 400 rabbits” – symbolized abundance, celebration, and excess. Heir to this ancestral culture, 400 Conejos is now the number one mezcal in Mexico.

Made using traditional methods in Tlacolula , Oaxaca , this mezcal is produced from 100% mature Espadín agave , harvested after 8 to 10 years of growth. The agave hearts are cooked in an underground conical kiln heated with mesquite and encino oak wood, then crushed using a stone mill pulled by horses. Spontaneous fermentation in open vats, thanks to indigenous yeasts naturally present in the air, precedes a double distillation in a copper pot still, resulting in a pure and expressive distillate.

The result is a mezcal with smoky, herbaceous, and fruity notes, carried by a beautiful freshness and a balanced texture. It was awarded a double gold medal at the 2021 San Francisco World Spirits Competition, as well as several international gold medals.
