For this recipe, the central fruit is Frécinette. This small banana variety has a soft, dense flesh and concentrated, powerful aromas. It is grown at altitude and only in tropical climates.
It is combined with Tahitensis vanilla and Damoiseau white agricultural rum. A dash of cane sugar syrup is added for a measured balance between rum and fruit.
