Jérémie's tasting notes

On the nose : The aromas of wood imbued with sugarcane rise from the glass, as you get closer the woodiness becomes more pronounced, it allows sweet spices to develop, including pepper and a hint of candied citrus and resin, the woodiness remains dominant, it is white and dry.

On the palate : the attack is dry and fluid, releasing the green tannins from the wood which become candied over time and move towards cooked fruit and cane, candied citrus notes are found afterwards.

The finish : the woodiness still lingers, sliding towards leather, but a surprising freshness reminiscent of star anise is present.
