Bally amber rum has spent more than 18 months in oak tuns to acquire its beautiful color and delicate aromas.

Nico's tasting notes

The nose of this rhum agricole is simple and spontaneous, with greedy wood sending out notes of chocolate. The fermentation notes of the young rum are still present, taking us towards a roundly vegetal, tropical and sweet profile.

Aeration takes us right back to the raw material, this white rum made from pure fermented cane juice. The aromas of fermentation have taken on woody accents and a slight patina, leaving the rum perfectly true and rustic.

The palate is lightly peppery on the attack, but quickly gives way to an all-pervasive cane juice. Accents of fermentation and fruit remain fleeting and fade fairly quickly. In turn, we find cane bark, straw, fiber, juice, then earth again.

The finish is rather dry and slightly spicy, and it's at this point that the signs of ageing can be seen.
