Bally 2003 is an agricultural rum from Martinique, over 10 years old. Distilled in Sainte-Marie, like Saint James rum, its cane comes from the slopes of Montagne Pelée, in Le Carbet. This rum is certifiedAOC Martinique, a guarantee of unfailing quality and identity.
Bally was the first company to practice extended barrel ageing, and has maintained this art over the years.
Nico's tasting notes
On the nose, this is a most serious and classy rum. The woodiness imposes itself, richly dressed, like a thousand-year-old cedar draped in layers and layers of spices. It's adorned with aged leather that cracks to reveal aromas of orange peel and dried fruit. At the heart of this wood are pulpy, candied nuts, something almost earthy, with lots of substance.
On the palate, we find the substance promised by the nose, but with balance. Far from filling the mouth, the rum passes over the tongue like a scarf soaked in spices, candied fruit, dried fruit, tobacco... The slightly resinous woodiness then takes over, with a grain that comes back to rub the taste buds.
The finish is spicy and peppery, with wood tannins melting into dried exotic fruit.
