Barcelo Imperial Onyx 38°: Description and customer reviews

Barcelo Imperial Onyx is a rum from the Dominican Republic, produced by one of the country's most emblematic distilleries. It is a blend of rums aged between 8 and 10 years in American oak barrels. These casks, which previously contained Kentucky bourbon, have been re-burned very heavily. This toasting, which goes as far as carbonization, is called "heavy char". It creates an activated charcoal that filters the rum into the barrel, but also promotes aromatic exchanges between the wood and the rum.

After ageing, this rum is filtered again on onyx stone, a black stone with mystical properties...

Nico's tasting notes

The nose opens with a pretty American oak barrel, tender and tinged with vanilla, blond tobacco and caramelized nuts. The surface is very lightly toasted, like medium-rare toast, still white at heart and soft.

With a little aeration, the rum develops on two levels at once. On the one hand, the roasting becomes stronger, and the burnt notes more insistent. On the other, the heart of the wood becomes increasingly vanilla-flavored and mellow.

On the palate, the rum's sweetness means it can be held for a long time. This allows us to appreciate its balanced, gourmet woodiness, bursting with vanilla, coconut milk and sweet spices. The lightly toasted oak takes us for a moment to the side of maple syrup.

The finish is very smooth, with a rather round texture and caramelized flavors.
