Bielle 2011 11 ans Premium agricultural rum reveals all the expertise of the Bielle distillery, located on the island of Marie-Galante.
Double-distilled from pure sugarcane juice, this eau-de-vie has spent 11 years in ex-bourbon American oak barrels on the island of 100 mills.
At Bielle, the Premium label means that the fermented cane juice undergoes a first distillation pass in a Creole column, followed by a second in a Muller still heated in a bain-marie.
Jérémie's tasting notes
On the nose: an elegant and refined nose, opening with the freshness of sugarcane, accompanied by delicate oak and vanilla notes. Aromas of stewed yellow fruits and marmalade add a delightful sweetness, while a touch of clove subtly underscores the whole.
On the palate: the attack is dry, lively, and slightly acidic. It reveals a generous sugarcane juice, enhanced by notes of clove, cardamom, and bergamot. The mid-palate then evolves towards flavors of cooked sugarcane and a delicately toasted woodiness reminiscent of mocha. Vanilla gradually envelops the candied fruit, while aeration brings more roundness and reveals a more pastry-like character, supported by a supple texture where the citrus notes gradually gain intensity.
The finish: long and indulgent, it lingers on stewed fruits, vanilla and sweet spices, leaving a warm and harmonious impression.
