Bielle Genou Cassé is a single-varietal agricultural rum from the small island of Marie-Galante. The "genou cassé" variety has little-known origins. We don't really know how or when it arrived on the island. It is characterized by breaks at each node, making its growth somewhat anarchic. Although difficult to harvest, the fiber is tender and juicy, sweet and fruity.
This agricultural rum has been distilled in Savalle columns, and bottled at the traditional Marie-Galante proof: 59%.
Nico's tasting notes
The nose develops aromas of fresh cane, still caught in its dry, peppery bark. An earthy freshness emanates from this dry, deliberate eau-de-vie. Citrus fruits are intense and bitter, like combava zest.
Aeration confirms the rum's dry, rustic character, with a fairly hard bagasse that's beginning to take on notes of fermentation. These add depth, but lag behind our vegetal, peppery bark.
The palate mirrors the nose: dry and rustic. The fresh, peppery cane is sharp and lingers on the tongue, hooking the taste buds. Notes of citrus zest and fermentation (pickles) harmonize very well on the mid-palate, adding a little extra roundness.
On the finish, the rum relaxes and melts a little more. It lingers on the palate for a long time, with an increasingly mellow cane.
