Bielle Vieux 3 ans is an agricultural rum from Marie-Galante, a small, very authentic island off the coast of Guadeloupe. This pure cane juice rum is the signature of the Bielle house. Slow fermentation, Creole column distillation, followed by aging in bourbon barrels. Behind this apparent simplicity lie a multitude of gestures, and above all an exceptional terroir, for a rum with a unique profile.
Nico's tasting notes
The nose develops a good deal of citrus (lime, lemon, blood orange...), mingling with fresh, vegetal cane. The oak brings hints of beeswax, and a fusion of sweet spices.
With aeration, the fruit remains, while the deeper notes are removed. The result is a fairly light, fresh, almost floral rum, with some sparkling spices.
On the palate, the aromatic profile immediately evolves towards what we know from Bielle: a ripe cane with a tenderly woody patina, and a concentration of sweet yellow fruit. Sweet spices introduce an even more gourmand and mellow side, leading to a pastry-like character.
The finish is finely peppery, returning to a relatively light profile.
