This exceptionally aged Mauritian rum is produced through a slow fermentation process, maintained between 18 and 24°C for 10 to 14 days. Distilled in small 400L hybrid stills, it is then reduced to 70% ABV before aging for a minimum of 8 years in oak casks that previously held sherry.
