This "extra old" pure cane juice rum from the Chamarel distillery in Mauritius was aged for just over 6 years in French oak barrels, before an 18-month finish in barrels that had previously contained Pedro Ximenez sherry.
The rum has been aged for a total of 8 years.
Nico's tasting notes
The nose is immediately marked by the Chamarel character, that coppery impression, as close as possible to the still. It exudes warmth, a frank greediness that doesn't lapse into excessive sweetness or roundness. The exotic fruits have a sweet juice, rubbing shoulders with pretty, ripe mirabelle plums and slightly oxidized pears with a hint of prunes.
With a little time, the rum gains in complexity and harmony, and a fine balance is achieved. On the one hand, the generous, ripe fruit, and on the other, a more roasted, caramelized palette, with soft, toasted wood. Then the sweetness of butterscotch soon envelops a candied, resinous vegetal.
On the palate, this rum is particularly seductive and enveloping. Without any aggressiveness, and even with a certain roundness, it unfurls a candied, elegantly spiced vegetal. Sweet ginger and clove simply caress, ripe fruit juices spill out languorously. Soft wood and vanilla take over, with bold blond tobacco and a spoonful of butterscotch.
The finish returns to pure cane juice. Well candied, it is adorned with notes of cherries and pits.
