Clairin 2020 Sonson is a cane syrup brandy produced in Cabaret, a commune in Haiti's Arcahaie district.
The syrup is made from the juice of the autochthonous "Madame Meuze" cane from the 2020 harvest, a variety that covers around 25 hectares dotted with banana and other fruit trees. The cane syrup ferments spontaneously with natural yeasts, then is distilled by Stephan Kalil Saoud in 3-plate copper Creole columns heated over an open fire.
The wine is bottled without any reduction in alcohol content.
