Made from cane syrup fermented with wild yeasts, Clairin Sonson is a raw distilled eau-de-vie.
The syrup that will then be distilled is obtained from the juice of the native cane “Madame Meuze” from the 2022 harvest. These canes are grown on a 25-hectare plot near the village of Cabaret. This commune is located in the district of Arcahaie, northwest of Port au Prince.
Stephan Kalil Saoud is in charge of the distillation, which is done using a copper Creole column.
