Clairin Vaval 2022 is a Haitian artisanal rum produced from fresh sugarcane juice . It is produced by the Arawaks distillery in the commune of Cavaillon.
This single-varietal rum comes from the “Madame Meuze” sugarcane variety. The pure cane juice ferments spontaneously with wild yeasts present in the cane and in the surrounding air.
Traditional distillation is carried out discontinuously by Fritz Vaval in a pot still .
The rum has undergone no addition or reduction.
Jérémie's tasting notes
On the nose: It is indeed a clairin, we find herbaceous, slightly smoky, mineral notes, ripe fruits tending towards resin and sugarcane.
On the palate: the initial taste is smooth and sweet, followed by a subtle spiciness that releases aromas of macerated fruit and vegetal chili, complemented by a few mild spices. The warmth fills the palate and carries its aromas with it.
The finale: We're still on the topic of spices and the fruitiness of chili peppers.
