Habitation La Salle is a former sugar refinery founded at the end of the 17th century in Sainte-Marie. It was located in the northeast of Martinique. This house once produced pure sugar cane juice for the distillation of tafia, the ancestor of rum.
Rhum Saint James recently restored the old Habitation in order to revive this site. They have also developed a range of AOC Martinique rums inspired by this place steeped in history.
The distillation of this white agricultural rum from pure cane juice is done in a Creole column in Sainte Marie. The sugar canes come from plots managed in organic farming. The cane brandy is left to rest and brewed for many months in stainless steel vats before being bottled.
