This cuvé Depaz comes exclusively from cane grown on the slopes of Montagne Pelée, the famous active volcano whose eruption in 1902 destroyed the town of Saint-Pierre.
After a long fermentation, the rum is slowly reduced, giving it balance and roundness.
Nico's tasting notes
The resolutely agricultural and vegetal nose of this rum is a real treat. The few degrees that separate it from the classic 50% undoubtedly give it a lovely sweetness. Its fruity side is both round and tangy, like freshly harvested cane juice.
Aeration gives it a pleasant fullness and warmth. A little pepper makes its appearance, but it's rather plump and doesn't manage to tighten the profile. It prefers to let itself go with the rich, increasingly fruity vesou.
On the palate, this rum has staying power, with fresh, lively cane and peppery bark. This attack avoids the pitfall of excessive roundness, but the expected greediness is well in evidence thereafter. A well-rounded texture settles in, rolling quietly over the taste buds at the speed of a lava flow. Candied citrus blossoms and perfumes a well-fermented vesou.
The round finish lingers on bitter notes of citrus zest and pepper.
