This agricultural rum comes from the Guadeloupean distillery Papa Rouyo. Made from red cane R579, it benefited from a 40-hour fermentation in stainless steel vats with selected yeasts, followed by a double distillation in a pot still combining stainless steel and copper. This 2021 vintage was aged in a fine-grained American oak barrel, with a medium toast.
