El Supremo 12 ans is a cane honey rum from the Capasa distillery in Paraguay. This cane honey is obtained by cooking and evaporating cane juice, just like the famous battery syrup from the French West Indies. The first part of the aging process is carried out in incensio casks, a noble wood endemic to Paraguay, southern Brazil and northern Argentina. This wood has the particularity of imparting a slightly pinkish hue, as well as very pronounced incense aromas. It is then matured in French oak barrels for a total of 12 years, entirely in a tropical climate.
It is then bottled without addition or cold filtration.
